From what I've seen on DIY Network, You have to figure out if they have srppouts in them that support the ceiling/roof/second floor. apparently the best way to do that is to call in some type of pro to look at plans/house/etc. I did see that you create a big doorway though. It'll keep the support of the wall and open up the room. For removing our wall, I hammered in the side of the wall to create holes I could see in to. Didn't want to saw without knowing I wouldn't hit wires. We opened up the wall by removing plaster/dry wall and then I sawed wall srppouts with my jigsaw.DIY network and this old house both have great videos and how tos for this stuff and that's what I've been using to figure out how to do what i want to do.
